The first snow day we got, I just counted myself extremely lucky. While still in Mexico, and granted even before we'd left, I had been stressing about missing too much school and falling behind on my school work. I would have missed several tests and quizzes, not to mention how much homework. But I came to terms with that and just enjoyed our vacation resigning to deal with the aftermath (aka a mountain-load of work) once we got back. But in that itself was the problem -- we would get back at around 2:00am on Monday the 20th (that day being MLK day so there was originally no school then). Thus, I would be too tired and jet-lagged to do much the following day. Still, I studied for all my makeup exams on the plane and felt ~somewhat~ confident that I knew the material. Nonetheless, I woke up early Tuesday morning, got ready, and made breakfast. And right as I was about to sit at the table to eat before heading out, my eyes still shut with sleep, my phone buzzed aggressively signaling several messages one after the other. It was my friend, way too excitedly for 6:00am, announcing that school had been cancelled. And with that I was beyond excited -- I immediately took my oatmeal, relocated from the table to the comfortable couch, got myself a blanket, and reveled in the glory that is an unexpected snow day. I stayed in, mostly on that couch, keeping warm, and watched the snow falling outside.
But I thought one day was all I had so I buckled down, got all my catch up work down and even studied for my tests. I was ready to go, albeit reluctantly, to school the next day. Then 5:30 rolls around and my phone once again got bombarded with excited messages that school had been cancelled for the next day too. What occurred next was a string of snow days unheard of in recent Kentucky public schools history. I woke up the next day and everything had iced over, completely. As it would happen, we ended up getting the entire week off of school which was simultaneously amazing and frustrating because it means graduation is pushed back. But oh what the heck, we'll just call 2014 The Year of the Snow and be happy we get a spring break type of vacation smack dab in the middle of January. And even longer for me when you add on the days we took off for Cancun;) I'm certainly not complaining haha.
So to entertain myself during the miraculously well-timed snow days, what else is a teenage girl to do but plan a spur of the moment dinner party. Our same group as our previous dinner party gathered and we once again scrounged up a delicious dinner which we enjoyed with good company, and afterwards hot tea as we all squished together on the couch and watched Gilmore Girls. This time we started out plain with a simple Salad with Feta Cheese, followed by Vegetarian Shepherd's Pie, and ended with a Phyllo Pastry Pear Tart. The following morning, we even had the leftover pear tart as part of our breakfast, because we're of course so resourceful;) None of us dared to venture outside and brave the cold so we mostly kept warm inside, though we did take a short trip out to do some quick shopping. Besides that, I also was able to take advantage of our time off of school and see some other friends I hadn't seen or talked to for a long time because of Mexico and it felt good to catch up with them. All in all, not at all a bad way to come back from vacation only to be greeted by another one! Minus the temperature shock of going from 80+F to somewhere in the negatives!
